Cider Glazed Roasted Vegetables

delicious medley of winter vegetables glazed in reduced apple cider.

1 ½ cups cubed Butternut squash, 1 inch cube
1 ½ cups chopped Parsnips, 1 inch
1 ½ cups cubed Rutabaga, ½ inch cube
1 ½ cups chopped Carrots, 1 inch
½ cup chopped Celery, 1 inch cube
2 medium onions, cut into 8 pieces
2 tbsp. olive oil
1 ¼ tsp. kosher Salt
¼ tsp. fresh ground black Pepper
2 cup Apple cider
1 cinnamon stick
2 cloves
2 slices fresh ginger
Pinch of nutmeg
