Coconut rice and beans (vegan)

It\'s a cheap, hearty and filling vegan rice bowl. Silky coconut milk, soft black beans a little spice is all you need for this Caribbean-inspired dinner.

200 g (1 cup) dried white, long grain rice
1 400 mL (14 oz) can of coconut milk
1 400 mL (14 oz) can of black beans, drained and rinsed
1 large clove garlic, chopped finely
1/2 tbsp Jamaican Hot Curry Powder
1 dried bay leaf
2 tsp coarsely ground salt (or kosher salt)
