CORIANDER CRUSTED SALMON WITH RED SWISS CHARD AND CORN HASH

This dish is a great example of a well cooked piece of fish. Really nice sear on the outside, while not dry and overcooked on the inside. Be sure to season really well and let the salmon rest for 2 ~ 3 minutes.

4 salmon fillets (de-boned and skinned)
4 cups chopped swiss chard (any or multi-coloured)
2 tsp whole coriander
2 cloves minced garlic
1 small onion
1 cup corn (any, just not canned...never canned)
1 cup diced tomatoes
ΒΌ cup white wine
2 tbsp olive oil
salt and pepper to taste
-toast the coriander in a dry pan and grind in a pestle and mortar -sautee the chard stems with onions and garlic until all are soft -add the corn, diced tomatoes and chard greens and sautee for another...
