What a fabulous way to have a meatless meal with my homemade \\\"Cucumber & Avocado Gazpacho\\\" topped off with our Roasted, crispy Chickpeas. It is light, healthy and flavorful. Perfect on a hot summer night.

4 Basil Leaves

1 Cup, Watercress

1, Celery Stalk

1 Garlic Clove

2 Tablespoons, Rice Wine Vinegar

1 Teaspoon, Honey or Agave

1/2, Cubanelle Pepper

1/2, Lemon, Juice & Zest

2 Ice Cubes

Water, to thin out soup if needed
