Gnocchi recipe with subtle curry flavor mixed the sweet flavor of golden beets.

1 tablespoon olive oil
3 garlic cloves, minced
1 white onion, diced
1 medium golden beet, peeled and cut into thin slices (about 2 cups)
3 cups swish chard (remove white parts)
2 cups vegetable stock
1 teaspoon coriander
1 teaspoon curry powder
1/2 teaspoon cumin
1/2 teaspoon ground sea salt
1 17-ounce package gnocchi
