Sweet Peppers stuffed with all the flavors of Tacos. Light & healthy dish using Ground Turkey cooked with Farro, Fresh Cilantro, Lime, Black Beans, homemade Taco Seasoning and baked. Finished off by melting Sharp Cheddar Cheese on top. Makes a great side dish or main course.

4 Sweet Peppers

1 Tablespoon, Olive Oil

1 Jalapeno, seeded & chopped

1 small, White Onion, chopped

6 Mushrooms, chopped (used Cremini in this recipe)

1/2 lb., Ground Turkey

1 Teaspoon, Chili Powder

1/2 Teaspoon, Cumin

1/4 Teaspoon, Paprika

1/2 Teaspoon ,Onion Powder

1/2 Teaspoon, Garlic Powder

1/2 Teaspoon, Dried Oregano

S&P

3 Tablespoons, Fresh Cilantro, chopped

1 Can (14.5 oz), Fire Roasted Tomatoes

1/2 Lime, juice

1/2 Cup, Water *(plus another 1/2 cup to add to baking dish)

1 Cup, Farro

1 Can, Black Beans, low-sodium

4 Tablespoons, Cheddar Cheese, shredded
