Dumpling Squash filled with Turkey Day Leftovers

Use up your turkey, veggies and gravy in this easy roasted squash Chopped recipe. You'll even find out how to Chop all hard shelled winter squash. Serves 2/

Baking Sheet Ingredients:
2 Dumpling Squash, with the top Chopped off. You’ll seed them after they’re roasted
1 teaspoon Olive Oil
1/2 teaspoon or a Sprinkling of Kosher Salt

Bowl/Pan Ingredients:
1 Tablespoon Olive Oil
1/2 cup Chopped Onion
1/2 cup Chopped Mushrooms
1/2 cup Chopped Carrots
1/2 cup Chopped Celery
1/2 cup Corn. I used frozen, but you could use fresh or canned. Drain the canned, but no need to defrost the frozen
1 cup Leftover Turkey Gravy
6 oz. Leftover Turkey Meat, Chopped
1/2 cup Quinoa
2 cups Arugula, Chopped
1 teaspoon Poultry Seasoning
Kosher or Sea Salt to taste
