This scrumptious fried rice is a snap to make and is super versatile!

2 tbsp vegetable oil
1/2 cup green onions, sliced
1/2 cup red bell pepper, diced small
1/2 cup shredded carrots
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 cup cooked chicken, diced
3 cups cold, cooked rice
3 to 4 tbsp reduced sodium soy sauce
1/2 cup frozen peas, defrosted
