Easy Chicken Stir Fry

This is one of the quick and easy meals I use when I have no idea what to make for dinner. Chicken, veggies, and rice -- it's simple yet satisfying. I've cut this recipe down so it serves the two of us perfectly.

For stir fry:
1 boneless skinless chicken breast
1 and 1/2 TBSP cornstarch
1 TBSP soy sauce
1/4 tsp ginger
1/8-1/4 tsp garlic powder (I just put in a good pinch)
2 TBSP oil
8 oz. frozen stir fry veggies (I use a half package)
1/2 cp. water
1/2 tsp. chicken bouillon granules

For rice:
1/2 cp. white rice
1 cp. water
1. Put rice and water in a small pan over low heat and start cooking. 2. Put 1 TBSP oil in skillet and begin heating. 3. Cut chicken into cubes. Add cornstarch to chicken and toss to coat. 4. Put chicken into hot skillet. Add soy sauce, ginger, and garlic powder. Stir fry until no longer pink. 5. Remove chicken to plate. 6. Add remaining oil. Stir fry veggies until hot. 7. Return chicken to pan with veggies. 8. Add water and bouillon. 9. Cook and stir until thickened and bubbly. 10. Serve over rice.
