Easy Donut Pancakes

Don't feel like going to the donut shop? These pancakes taste donut-y and rich; deep fried in heart-healthy oils. Gourmet Maple Bacon, Eggnog, Blueberry, Lemon, Irish Cream and Chocolate chip directions included.

5-6 servings pancake mix
2 cups coconut oil
1 tbsp dark brown sugar

Place coconut oil in small saucepan, set the burner to just below medium-high heat. Let the oil preheat while you make your batter, about five minutes.
**Stoves vary a little so yours may need a little higher or lower. If the pancakes don't sizzle much when they first go in, you need to nudge it up a little.
Mix your water and other ingredients with your pancake mix, according to the directions. Pour in enough batter to make a 4 inch pancake in your pan. When there are small bubbles in the middle of your pancake, flip it gently with a spatula. Cook the other side approximately 30 seconds. Repeat until your batter is gone.
Easy Varieties:
Top with real Maple syrup, confectioners sugar or a mixture of white sugar and cinnamon.
Cinnamon bun: Top with Butter, Dark brown sugar and Cinnamon.
Blueberry: Add 2 tbsp blueberries to the batter, top with blueberry syrup or confectioners sugar.
Chocolate Chip: Add 2 tbsp chocolate chips to the batter, top with whipped cream or confectioners sugar.
Raspberry: Top with a tbsp of raspberry pie filling and agave syrup.
Lemon: Top with a tbsp of lemon pie filling and agave syrup.
