A simple puree of pumpkin, Parmesan cheese, and cauliflower comes together in this Easy Pumpkin Soup. It’s a healthy dinner option that is full of fall flavor to warm your insides on a cool evening!

½ Tbsp. olive oil
1 sweet onion, diced
1 tablespoon minced garlic
1 head cauliflower, diced
32 ounces vegetable broth (can also use chicken broth if not vegetarian)
1 (15 ounce) can unsweetened pumpkin puree
¼ cup Parmesan cheese
1 tsp. salt, to taste
Optional (for serving): sliced green onion, croutons, and/or shaved Parmesan cheese
