Easy Summer Salsa

I am a born and bred Jersey Girl which means my summers are spent at the beach. Since I’m so close, I have the luxury of being able to just go for a few hours and leaving when the beaches start to get crowded with tourists (or bennys as the locals call them). Even so, I usually pack a lunch since a day at the beach can really work up your appetite! My sister is my usual beach partner, and our usual beach ritual involves a stop at WaWa (a continence store in the northeast) for one of their sub

- 1 ripe avocado, diced into 1/2 inch cubes
- 1 cup of edamame beans, shelled (I used frozen edamame beans- they were thawed by the time we ate lunch, but if you are eating it right away, make sure to thaw them earlier)
- 1 can of mexi-corn (Green Giant makes my favorite Mexi-corn- it is corn with black beans and diced red peppers)

Combine all ingredients in a bowl and mix well.
Chill until ready to serve. Serve with your favorite tortilla chips.
