Eggplant Slices with Black Bean sauce

Eggplant snack with oriental flavor.

1 tablespoon black bean sauce
2 garlic cloves, minced.
2 tablespoon olive oil
½ pound eggplant
Preheat oven to 375 degrees Fahrenheit. Peel and slice eggplant into 1/8-inch thick slices. Heat oil in a wok, sauté black bean sauce and garlic until fragrant, about 2 minutes. After turning off heat, put eggplant slices into the wok and coat the eggplants with sauce. Prepare a big baking sheet. Spread out the eggplant slices in one layer. Bake for about 15 minutes. If you want the eggplant slices to be crispy like chips, flip them and bake another 15 minutes. But be careful not to let them burnt. The thinner they are they quicker they are done. Check often. Serve on greens or as salad, or plain.
