Favorite Taco Soup {Vegan!}

This is our family's favorite taco soup! Once when I was out of ground beef, I replaced it with cooked cracked wheat. We've never gone back! You will love it because it's much lower in fat, has beneficial whole grains, and it's full of flavor! Note: if you are making this a 100% vegan meal, be sure to check your taco seasoning ingredients (some contain whey), and omit the cheese and sour cream garnishes.

1/4 cup cracked wheat
1 cup water
1 small onion, diced (or about 1/4 c chopped, dehydrated)
1 packet taco seasoning (or 1/4 cup)
1 can corn
1 can kidney beans
1 can black beans
1 can garbonzo beans (chickpeas)
1 can petite diced tomatoes
1 can petite diced tomatoes with green chiles
2 small cans tomato sauce

Garnish with:
sour cream
avocado
shredded cheese
tortilla chips
