Fruit Fried Pies

These single serving pies will be the hit of the season! You can use canned, frozen or fresh fruit. My favorite is fresh apple! My husband loves peach or apricot. If you want to use ready made pie crust, these pies can be made in less than 30 minutes start to finish! All fruit must be pre-cooked even if you are using canned peaches, apricot or apples.

Filling:
(1) 29 oz. can of Sliced Peaches, (slightly drained)
(1/2) cup sugar (more sugar is needed for FRESH fruit)
(1) tsp. corn starch (more cornstarch is needed for FRESH fruit)
(1) tsp. butter
(1/2) tsp. Cinnamon
(dash) Nutmeg
In a 2-quart saucepan mix together filling ingredients. On medium heat,
stir ingredients constantly until completely mixed and starting to
thicken. Reduce heat and simmer for about 10 minutes until thickened and tender. (Reserve filling, this can be prepared ahead of time). Keep either in the refrigerator or freeze until you are ready to make the pies.
Bertie's Pie Crust:
(2) cups flour
(1/4) cup sugar
(1/4) tsp. Cinnamon
(1) tsp. sea salt
(3/4) stick chilled "Butter Flavor Crisco" baking sticks
4 to 6 Tbsp.. ice water
Cinnamon Glaze:
(1) cup powdered sugar
(1/4) tsp. Cinnamon
(1) Tablespoon buttermilk (add one more teaspoon at a time to get the consistency you want), milk can also be used. I always have buttermilk on hand because I LOVE to cook with it!

Blend dry ingredients, cut in Crisco until mixtures crumbles, add 1/2 of the water using a fork distributing evenly, pinch together to see if mixture sticks together, if needed, add more water (1)...
