A fresh and tasty summer salad - quick and easy to make with only 10 ingredients!

1 1/3 cups (250g) couscous
2 cups (475ml) vegetable broth
2 tomatoes, skinned and cubed
2 large apricots, pitted and cubed
2.1 oz (60g) dried dates, pitted and cubed
Bunch of fresh mint, chopped
1/4 cup (60ml) olive oil
Juice of a lemon
Salt and pepper to taste
2 cups (475ml) vegetable broth
2 tomatoes, skinned and cubed
2 large apricots, pitted and cubed
2.1 oz (60g) dried dates, pitted and cubed

1/4 cup (60ml) olive oil

Salt and pepper to taste
Whisk all salad ingredients together until a smooth dressing forms.
