Gluten Free, Dairy Free, No Cook Chicken Nuggets!

Who wants to pay $7.99 for a bag of chicken nuggets? Or spend a lot of time trying to make them only to have your kid make a yuck face? I honestly made this up as half-baked (see what I did there) attempt to placate my daughter. I was shocked at how crispy, flavorful, fun and easy these were.

1 tbsp almond flour
2 tbsp Gluten-Free bread crumbs
2 tbsp mayonnaise,
1/4 cup original almond milk
salt and pepper (to taste)
precooked chicken breast.
yields 10-13 nuggets

1. Break apart the precooked breast into nugget sized pieces. I bet pre-purchased strips would also work just fine.
2.* In a medium bowl, combine bread crumbs, almond flour, salt, and pepper.
3. In a second bowl, combine mayonnaise and almond milk. Don\\\'t worry if there are some tiny lumps.
4. dip chicken pieces in the milk/mayo batter to coat. You\\\'ll be surprised how easily this happens.
5. Roll battered chicken in seasoned breadcrumb/flour mix until coated.
You\\\'re done. you can warm them in the microwave for about 20 seconds or in the oven for a few minutes at 350 degrees, but if you heat the chicken first, you won\\\'t have to. Yum!
*I cook by the nose. Try these amounts or look at the pictures and adjust accordingly.
