Goji Almond Walnut Cookies

Easy raw vegan cookies.

¼ cup goji berries
¼ cup raw almond
¼ cup raw walnut
1 teaspoon maple syrup
Put almond and walnut in a food processor and chop until crumbly. Add goji berries and blend until well mixed. Add maple syrup and blend again. Add more if desired, or add a little water if too dry. Use a 1-inch diameter cookie cutter as a guide. Place the cookie cutter on a plate. Scoop some nut mixture and plate in the cookie cutter. Press down with a small spoon or finger. Remove the cookie cutter as you hold the edge of the cookie down. Twist the cutter a bit to make it loose. Repeat the above procedure for the rest of the nut mixture. Eat right away, let dry for few hours, or leave overnight.
