Golden Beet Soup

Nice color and rich flavor.

2 cup golden beet, peeled and chopped.
½ cup chopped onion
½ teaspoon grated ginger
½ teaspoon grated lemon zest
3 cup water
½ tablespoon lemon juice
Put golden beet, onion, ginger, lemon peel and water into a pot, boil then turn to low fire, cover and simmer for about 1 hour. Let the content of the pot cool for 15 minutes, then use a blender to blend into a soup. Return soup to the pot and reheat to desired temperature. Turn off heat, add lemon juice and stir well. (Optional) Garnish with chopped spinach before serving.
