Gooseberry Pickle

Great preserving recipe for using up all those small & under-ripe gooseberries. Goes well with oily fish (mackrel, sardines etc.) and cheese.

500g/1 pint gooseberries
115g/4oz demerara sugar
salt (the book doesn't specify quantities so I added 5g/?oz)
570ml/1 pint white wine vinegar
7g/¼oz mustard seeds
85g/3oz garlic
170g/6oz raisins
7g/¼oz ground paprika
