Green Cabbage and Potato Soup

This vegan soup is healthful and easy to make. Pureed into soup, both the green cabbage and potato are soft on the stomach and easy to digest.

4 cups shredded green cabbage
1 big russet potato
4 cups water
½ teaspoon salt
¼ teaspoon ground white pepper
Peel and cut potato into chunks. Put potato in a pot, add water to cover. Bring to boil and cook for 10 minutes. Add cabbage and simmer for 10 minutes. Puree in a blender, return to pot. Reheat, season with salt and pepper. (Optional) Garnish with dried parsley.
