Grilled Pineapple Chicken is a quick and easy dinner recipe prepared on the grill! It starts with a homemade marinade for the chicken breasts which you can do the night before or morning of when making this easy recipe. Then you simply take the chicken breasts out and grill them until they are nice and juicy. While you are grilling the chicken your will also grill your pineapple rings so they have a delicious charred and caramelized taste to them. Then top your chicken breasts with the pineapple sliceand serve! So quick, easy and delicious!

8 oz pineapple rings
1/4 cup brown sugar
1/4 cup low sodium soy sauce
1/4 tsp garlic powder
1/2 tsp ginger powder
1/8 tsp ground black pepper

A delicious international curry dish adapted from Chef Daniel Louis' recipe from the Seychelles, which combines the sweetness of banana with the smokey flavours of eggplant.

2 small green bananas ( peeled and cut into 1/2 pieces about 150g )
1 small eggplant ( peeled and diced, about 150 g )
1 teaspoon salt
1 teaspoon turmeric powder
2 (½ tablespoons) curry powder
2 pieces cinnamon or cassia
1/4 teaspoon chili powder
1/2 inch piece of ginger ( roughly chopped )
4 cloves garlic ( roughly chopped )
1 small onion (about 2” diameter) ( finely chopped, about 4 tablespoons )
1 small tomato ( finely chopped )
1/2 cup water
2 green chillies ( halved )
1/2 teaspoon thyme
1 1/2 cups coconut milk
2 tablespoons corn, safflower ( or other non-flavoured vegetable oil )
