Grilled Salmon with Artichoke Salsa

This recipe is so easy, healthy and delicious. It is definitely guest worthy! You can adjust the amounts of ingredients in the salsa based on your taste buds. Enjoy!

3 tablespoons low fat balsamic vinaigrette salad dressing
2 t. freshly squeezed lemon juice
4 salmon fillets (4 oz. each)
1/3 cup chopped fresh parsley
1/3 cup chopped plum tomato
1/4 cup chopped drained marinated artichoke hearts
1/4 cup crumbled reduced-fat feta cheese
1/4 cup coarsely chopped pitted ripe olives
Preheat a grill to medium heat. Mix the dressing and lemon juice. Pour half of the dressing mixture over the salmon in a large resealable plastic bag. Seal bag and refrigerate while preparing the salsa. Combine the remaining dressing mixture: parsley, tomatoes, artichokes, cheese, and olives. Let it stand at room temperature until ready to serve. Remove the salmon from the dressing mixture and discard the bag and dressing mixture. Grill the salmon for approximately 5 minutes on each side, or until salmon flakes easily with fork. Serve with the salsa.
