I was at home this last week and our oldest family friends were staying there too. Somehow the blog came up and my friend Kelsey said, "oh I have a recipe you have to share, people will love it!" So we went to the store and bought the ingredients. We made a double batch. It evaporated. Seriously, it was that good. I have had similar type salsa's before, but none hold a candle. I'm not sure what it is that makes this one so delicious (maybe the red wine vinegar?) but wow. You

1 can shoe-peg corn
1 can black eyed peas
2/3 cup fresh cilantro
2/3 cup green onion
3 medium tomatoes-diced
3 avocados-chunked
1/4 cup olive oil
1/4 cup red wine vinegar
1 Tbsp lemon juice
1/2 t Cholula hot sauce
1/2 t cumin
1 1/2 t salt
2 cloves fresh diced garlic
1 can black eyed peas
2/3 cup fresh cilantro
2/3 cup green onion
3 medium tomatoes-diced
3 avocados-chunked
1/4 cup olive oil
1/4 cup red wine vinegar
1 Tbsp lemon juice
1/2 t Cholula hot sauce
1/2 t cumin
1 1/2 t salt
2 cloves fresh diced garlic
Combine all ingredients in a large bowl and toss. Serve with chips!
