1 Medium Sweet Potato, mashed (about ½ cup mashed) 1 Cup +1 Tbsp Quick-cooking oats 1 tsp Cinnamon ¼ tsp + a pinch Salt ½ Cup Almond butter, at room temperature or cold (Do not melt!) ½ Cup Honey ¼ tsp Vanilla extract ¼ cup + 2 Tbsps Craisins, roughly chopped ¼ Cup Almonds, finely chopped 2 tsps Coconut palm Sugar (or brown sugar)

These quick and easy, healthy breakfast cookies are made with oatmeal, sweet potato, almond butter, and cranberries. Perfect for on the go!
To bake the sweet potato:
Preheat oven to 400 degrees and line a small baking tray with tinfoil.
Pierce the sweet potato all over with a fork and place on the prepared baking tray,
