2½ cups rolled oats (gluten-free if needed)
¾ cup flour (gluten-free blend if needed)
1 tsp. baking powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. ginger

1 cup grated carrot
½ cup milk (lactose-free or non-dairy substitute if needed)
¼ cup maple syrup
1 large egg
1 tsp. vanilla
