This Healthy Pumpkin Pie made with an addicting walnut date crust & topped with pumpkin custard is super easy to make & so delicious you won’t want to share! What pumpkin pie dreams are made of! Gluten Free + Low Calorie + Paleo

For the pumpkin filling:
1 cup unsweetened almond milk
2 large egg whites
1 can pureed pumpkin
¼ cup maple syrup
1 tsp vanilla extract
1 tsp cinnamon
½ tsp ground ginger
¼ tsp cardamom
¼ tsp all spice
For the crust:
18 dates, pitted & soaked in water for 1 hour
3 cups raw, unsalted walnuts
½ tsp cinnamon
