Herbed Fruit and Nut Crisps are the perfect addition to any appetizer spread or substitute as a great snack. Dried herbs, dried fruits, and toasted pecans are mixed into a quick bread batter, baked until golden, thinly sliced, and baked once more until crispy.

Herbed Fruit and Nut Crisps

2 cups AP flour (you may substitute whole wheat, spelt, etc)
1 tbls dried rosemary
1/2 tbls dried sage
1 and 1/4 tsp pink sea salt
2 and 1/4 tsp baking soda
1/2 cup raisins, packed
1/2 cup dried cherries, packed (mine were large so I cut them in half)
3/4 cup chopped pecans, toasted
1/2 cup pepitas, toasted
2 cups coconut milk
1/2 cup honey (I use raw honey so I warmed it slightly before mixing with the other ingredients)
1/4 tsp vanilla extract (optional)
