Homemade Yougurt Topping

Crunchy, good for you and keeps you happy till luchtime!

6 cups gluten free oats
2 cups almonds
1 1/2 cups pumpkin seeds
1 1/2 cups sunflower seeds
1 teaspoon salt
1 cup maple syrup or honey
1/2 cup coconut oil
2 tsp almond extract or coconut extract
1 1/2 cups large flake unsweetend coconut
1 cup ground flax
2 cups almonds
1 1/2 cups pumpkin seeds
1 1/2 cups sunflower seeds
1 teaspoon salt
1 cup maple syrup or honey
1/2 cup coconut oil
2 tsp almond extract or coconut extract
1 1/2 cups large flake unsweetend coconut
1 cup ground flax
Put oats, nuts and seeds into a roaster. Melt honey, oil, salt and extract. Pour over oat mixture and stir till well coated. Bake in pre heated oven at 350 degrees for 30min. stiring every 10. Then stir in coconut and flax and bake 10 min more. Cool in roaster and store in airtight containers. You may add spices like cinnamon. ginger and nutmeg or change the extract to vanilla. Whatever your family prefers. Sometimes I add dried cranberries when cool.
For breakfast I put 2 -3 Tablespoons of greek yougurt in a bowl, about 1/2 a cup of topping and add a Tablespoon of chia seeds on top. Yummy and good for you.
