Honey Ginger Vegetable Stir Fry

A gluten free, vegetarian version of my favorite stir fry! Feel free to use this veggie mix, or toss in some of your favorites!

1
2 scallions, chopped
1/2 teaspoon sesame oil
1/4 cup green pepper, diced
1/3 cup tomato, diced
1/3 cup yellow squash, diced
1/3 zucchini, diced
1/2 teaspoon garlic powder
1/2 teaspoon ginger
1 Tablespoon Gluten Free soy sauce
2 teaspoons honey
1 teaspoon sesame seeds
Brown rice
1. Cut all ingredients as specified. 2. Saute half of the scallions and green pepper in sesame oil. 3. Add tomatoes, garlic powder and ginger. Saute for 1 minute. 4. Add squash, zucchini, soy sauce, and honey. 5. Cover and simmer until veggies are soft. 6. Serve over brown rice. Top with the rest of the scallions and sesame seeds. 7. Enjoy! This recipe serves one, but you can definitely multiply the ingredients to feed additional dinner companions!
