Hungarian Goulash is one of our family's favorite meals. This tasty dish has tender chunks of beef and vegetables in a savory broth, with easy pinch off csipetke (chip-ET-keh) noodles!

For the Hungarian Goulash

Ingredients:
2 pounds stewing beef, cubed

1 medium onion, chopped

2 tablespoons olive oil

2 tablespoons sweet Hungarian paprika

2 teaspoons salt

1 teaspoon black pepper

4 cups water

2 cups carrots, chopped

2 cups parsley root, chopped along with the greens

2 cups celery, chopped

8 medium red skin potatoes, quartered

2 cups water, or enough water to cover vegetables

2 tablespoons beef broth paste or bouillon, or to taste

2 teaspoons (additional) sweet paprika, or to taste

Ingredients:
1 large egg, beaten

1/2 cup flour, unbleached or all-purpose
