20-minute Kale and Roasted Cashew Fried Rice – extremely easy, super healthy, and SO delicious.

3 cups cooked Brown Basmati Rice, chilled
2 tbsp olive oil or coconut oil, divided
1 small onion, chopped
½ red bell pepper, thinly sliced Coupons

5 cloves garlic, minced
1 tsp fresh grated ginger
½ - 1 tsp chili flakes
6 oz kale, chopped
3 tbsp low sodium soy sauce
