Khuska Biryani or Kuska Biriyani, Khushka Rice, Kuska Rice is plain biryani cooked in onion, tomato base without using any vegetable or meat. Kusk abiryani is more of flavored rice with lots of spices, mint leaves, coriander leaves along with onion, tomato and served mostly with kurma or with the simple raita. Basmati Rice - 1 cup
Onion - 1 medium ( cut into thin slices)
Tomato - 1 medium ( finely chopped)
Ginger paste - 1 teaspoon
Garlic paste - 1 teaspoon
Green chilies - 2 ( slit lengthwise)
Red chilly powder - 1 teaspoon
Coriander powder - 1 1/2 teaspoon
Garam masala powder - 1/2 teaspoon
Milk - 1/2 cup
Coriander leaves - 1/4 cup ( chopped)
Mint leaves - 1/4 cup ( chopped)
Water - 1 cup
Salt - to taste
Curry leaves - a small sprig
Bay leaves -2
Cardamon - 2 pods
Oil / Ghee - 2 tablespoon
Onion - 1 medium ( cut into thin slices)
Tomato - 1 medium ( finely chopped)
Ginger paste - 1 teaspoon
Garlic paste - 1 teaspoon

1. Soak the basmati rice for at least 30 minutes.
2. Heat oil in a pan or pressure cooker, add oil and add cardamon, curry leaves and bay leaves and saute.
