Korean Style Sweet Potato Noodles

This Korean Style Sweet Potato Noodles is inspired by the popular korean dish Japchae. But instead of using korean glass noodles (which are made of sweet potato starch), spiralized sweet potato is used!

Beef
250 g sirloin or rump steak, thinly sliced*
1 tbsp light soy sauce
1 tsp sesame oil
0.5 tsp rice vinegar
0.5 tsp garlic, minced
good pinch of black pepper
Vegetables
350 g sweet potato
½ small white onion
4 spring onions
1 carrot
½ red pepper
100 g (about 4-5) white button mushrooms
100 g (good few handfuls) of spinach +1 tsp sesame oil + ½ tsp garlic
salt
Dressing
1.5 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey
½ tsp minced garlic
Pinch of black pepper
