Lemon Herb Salmon Zucchini is a quick one pan meal packed with protein and tons of flavor.

2 medium zucchini, spiralized or chopped
2 3 ounce portions of salmon
1 tbsp dried parsley
¼ tsp oregano
¼ tsp thyme
¼ tsp rosemary
1 tbsp minced garlic
1 tsp Dijon mustard
1 tsp extra virgin olive oil
1 tbsp freshly squeezed lemon juice
salt & pepper to taste
