Tasty lime coconut chicken kabobs with juicy pineapple that are quick to grill and easy to make! The perfect summertime dinner!

1/2 cup coconut milk
3 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons granulated sugar
2 limes, juice and zest
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cumin
1 1/2 teaspoons coriander
2 teaspoon curry powder
3-4 boneless, skinless chicken breasts, cut into 1” cubes
1 small pineapple, peel and core removed, and cut into 1” cubes
3 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons granulated sugar
2 limes, juice and zest

1/2 teaspoon pepper
1 teaspoon cumin
1 1/2 teaspoons coriander
2 teaspoon curry powder
3-4 boneless, skinless chicken breasts, cut into 1” cubes
1 small pineapple, peel and core removed, and cut into 1” cubes
In a large bowl, whisk together the coconut milk, olive oil, soy sauce, sugar, lime juice and zest, garlic, salt, pepper, cumin, coriander and curry powder. Add the chicken cubes and stir to coat them all....
