This was the first time I’d ever eaten huevos rancheros, let alone made them. I was told by my mom that they were not what huevos rancheros should be. That’s okay – they’re my made-up version and I’m good with that. They were tasty whether they were traditional or not. That’s the beauty of this recipe – you can make it whatever your want it to be. Want to add some avocado? Go for it. Got some ripe tomatoes? Add those suckers in there too.

2 cauliflower tortillas
1 large sweet potato, cubed
1 small yellow onion, finely chopped
1 tbsp olive oil
2 tbsp butter, margarine or coconut oil for frying
