Mashed Yam and Baked Yam with Lemon Thyme Dressing

This recipe works with potato as well.

1 yam
½ tablespoon fresh thyme
½ tablespoon lemon juice
2 tablespoon water
1 garlic clove, minced.
Preheat the oven to 325 degrees Fahrenheit. Brush the yam clean, peel on. Cut out several slices (optional). Place the yam and slices into the oven, directly on the rack or in a baking pan. Bake for about 1 hour. The slices should be ready in less than 30 minutes. After the rest of the yam is ready, let cool then mash it. To make Lemon Thyme Dressing: Mix thyme, lemon juice, water and garlic. Pour the dressing over mashed yam or serve on the side.
