These healthy, kid-friendly Paleo Italian Chicken Fingers are grain free, gluten free, dairy free and sugar free. Lightly breaded and pan fried in coconut oil to a golden brown.

2 lbs Tyson Fresh Chicken Tenderloins
1 cup almond flour
3 tablespoons tapioca starch
1 1/2 teaspoons garlic salt
1 teaspoon salt
2 teaspoons Italian seasoning
1/4 teaspoon black pepper
2 eggs, whisked
1/4 cup coconut oil, for frying
1/2 teaspoon paprika

My favorite omelette recipe has shallots, mushrooms, spinach, and Parmesan. All wrapped up in a perfectly cooked omelette. Does that sound good or what?

For the filling:
1 c mushrooms, chopped
2 c baby spinach
1 shallot, chopped
1/4 c Parmesan cheese
For the omelette:
3 large eggs, whisked
1/2 Tbsp extra-virgin olive oil
1/2 Tbsp butter
salt and pepper - about 1/4 tsp each
