Mediterranean Veggie Sandwich: Panera Bread Copycat

A delicious copycat of Panera Bread's med veggie sandwich! Can be vegan without the cheese!

2 slices of bread
2 tablespoons of jalapeno cilantro lime hummus
¼ ( ½ cup spinach or lettuce )
¼ cup sliced cucumber
3 slices of tomato
¼ slice d red onion
2 slice d peppadew peppers
1 and ½ tablespoons crumbled feta cheese
Spread the hummus on one side of both slices of breads. Layer on the veggies in the order listed above. Don’t forget the cheese (unless you’re making it vegan)!
