Peanut Soy Chicken

4 oz spaghetti
1 cup cooked chicken
2 cups frozen stir-fry veggie mix
2 Tbsp soy sauce
2 Tbsp peanut butter
1/2 tsp ground ginger
1/4 tsp garlic powder
salt and pepper to taste
Cook spaghetti according to package directions. Over medium-low heat, combine peanut butter and soy sauce. Once peanut butter is "melted", add the vegetables, ginger and garlic powder and stir-fry until vegetables are crisp-tender. Add the chicken and cook until heated through. Serve over cooked spaghetti.
