Easy pressure cooker Italian Wedding Soup, this recipe is gluten free, paleo, Whole30, low carb and healthy, and is perfect to make in your Instant Pot or any other electric pressure cooker!

1 lb Italian sausage 454g
1 tbsp olive oil
1 large onion, chopped
2 large carrots, sliced thin
4 cups gluten free unsalted chicken stock 1 litre

1/4 tsp salt
