5 oz tomato sauce
1/2 cup water
4 tablespoons oil
1 onion (chopped)
3 cloves garlic (grated)
1 eggplant
1 zucchini
1 yellow summer squash
2 peppers (ex: bell peppers)
to taste salt and pepper
1 tablespoon dill (dried)

1. Preheat oven to 200 degrees.
2. Combine tomato sauce, water, 2 tbsp oil, onion, garlic and salt and pepper to taste. Spread the mixture into a 9 inch round baking pan.
3. Peel and slice the eggplant, zucchini and squash. Slice the peppers. Arrange alternating slices of each vegetable starting from the outer edge of the pan and going in circle towards the center, (see photo)
4. Sprinkle with salt and pepper to taste, dill and the remaining oil and bake for about 35 minutes, until the vegetables soften.
