Rice Noodle Salad with Lime Tahini Dressing - simple yet wholesomely delicious!
for the dressing:
1/3 cup tahini
Juice of 1 lime
2 tablespoon honey
1 clove garlic, minced
1/4 teaspoon salt
1 tablespoon extra virgin olive oil
2 tablespoons water
8 oz. brown rice noodles
4 cups arugula
1/2 cup diced scallions (green onions)
1/2 cup crushed walnuts
3 bell peppers (red, orange, yellow), julienned
1/3 cup tahini
Juice of 1 lime
2 tablespoon honey

2 tablespoons water
8 oz. brown rice noodles
4 cups arugula
1/2 cup diced scallions (green onions)
1/2 cup crushed walnuts
3 bell peppers (red, orange, yellow), julienned
Bring 4-5 quarts water to a boil. Add noodles and boil 4-5 minutes or until tender, stirring occasionally. Drain and rinse under cold water.
