This tasty combo of veggies, grains, fruit is over the top delish when you toss it with the unique Pumpkin Dressing.

Baking Sheet Ingredients:
1 Medium Green Apple, Chopped
1/4 lb. Green Beans, String end removed
1 Red Pepper, Chopped
4 Medium to Large Brussels Sprouts, deconstructed
1 Tablespoon Olive Oil
Kosher or Sea Salt to sprinkle lightly on these ingredients

Bowl Ingredients:
4 cups Arugula, Chopped
1/2 Avocado, Chopped
2 Green Onions, Chopped
1 cup Quinoa Quinoa

Chopped Style Dressing Ingredients:
1 Tablespoon Coconut Oil, melted. I melt mine in the microwave.
1-2 Garlic Cloves, finely Chopped
1 Tablespoons Balsamic Vinegar
2 Tablespoons canned Pumpkin Puree, not the pie filling
1 teaspoon Dry Rubbed Sage or 1/4 teaspoon Dried Ground Sage
1 drop Vanilla Extract
Kosher or Sea Salt to taste
Freshly Ground Black Pepper to taste
