Roasted Lemon Broccoli is a fantastically simple and healthy way to enjoy broccoli any time of year. Roasting broccoli brings out rich deep flavors unlike anything you will get from steaming or boiling it and the addition of lemon zest adds a bright freshness to the dish.
1 large head broccoli
2 Tbsp. olive oil
2 tsp. lemon zest
2 Tbsp. Lemon juice
sprinkle of salt and pepper

sprinkle of salt and pepper
Break your broccoli head into medium florets. Toss in a large bowl with the remaining ingredients. Spread on a lined baking sheet and bake at 400° for 30-40 minutes.
