To make the oil
750ml oil
2 heads of garlic
10ml dried thyme
25 fresh red chillies
Method
Finely chop garlic and chillies, add thyme and mix well together with oil
To prepare:
10 pieces chicken portions OR
1 whole chicken disjointed

Finely chop garlic and chillies, add thyme and mix well together with oil
To prepare:
10 pieces chicken portions OR
1 whole chicken disjointed
Place chicken in a casserole dish and sprinkle 1/2 cup of the oil mixture with 1/2 cup of lemon juice. Marinate for 2 hours. Cover casserole dish with aluminum foil and bake at 150° C or 300° F oven for about 40 minutes.
Remove the foil and brown for about 20 minutes, basting every now and then. Garnish with fresh rosemary and thyme.
Serve with rice, or French fries and salads.
