Shrimps with Chinese Chive

The delicacy of this dish comes from the very freshness of the river shrimps, and the Chinese chives can further strengthen the fresh taste of river shellfish. The combination of shrimps and Chinese chives is also a traditional Asian treat for male health!

1 pound river shrimps
6 oz. Chinese chives
1/4 oz. garlic
1/4 oz. ginger
1/4 oz. green onion
To taste salt
2 T. vegetable oil

Wash the river shrimps and drain. (No need to devine or blanch.) Slice the ginger and garlic. Chop the Chinese chives and green onion into 1" pieces.
Heat the oil in a pan, fry the ginger, garlic and green onion to bring about their aromas. Add the river shrimps, and saute with strong heat for 2-3 minutes, until the shrimps barely change color. Add the Chinese chives and stir fry briefly to combine. Add the salt and stir again. Turn off the heat as soon as the salt is combined; by that time the Chinese chives should just start to turn tender.
Note: keep the cooking time short and over strong heat, so that the shrimps and Chinese chives will keep the freshness and not become tough when they get cooked.
