Super simple and simply delicious, this southwest salad is perfect for any occasion! Makes a great side dish, it\\\'s perfect for a light lunch, and it even makes a great salsa with chips.

Salad
1 can (15 oz) corn, drained
1 can (15 oz.) black beans, drained
1 red bell pepper, diced
1/4 cup red onion, diced
3/4 cup cilantro, chopped
2 to 3 avocados, cubed
Dressing
2 Tablespoons lime juice
2 Tablespoons olive oil
2 Tablespoons honey
1 can (15 oz) corn, drained
1 can (15 oz.) black beans, drained
1 red bell pepper, diced
1/4 cup red onion, diced
3/4 cup cilantro, chopped
2 to 3 avocados, cubed
Dressing
2 Tablespoons lime juice
2 Tablespoons olive oil
2 Tablespoons honey
1. Drain and rinse the corn and beans. Chop the bell pepper, onion, and cilantro.
2. Mix the lime juice, olive oil, and honey together. Pour over salad and toss.
