For the salad:
2 teaspoons olive oil
1 ear corn kernels cut off
1 sweet potato spiralized
1 can black beans drained and rinsed
1/2 red onion chopped
2 cups baby kale (or other greens)
For the avocado pesto dressing:
1/2 avocado
1 lime juice only
bunch cilantro
2 tbsp macadamia nuts
1/2 red onion
1 clove garlic
1/4 cup water
salt + pepper to taste
